It is rare that a coffee moves me to tears.
It was a stressful process to get this coffee to us. First it was lost, then found, then we heard that one of the vacuum-sealed bags had broken. It was a relief to finally see our coffee on April 6; it was sealed fresh from harvest in October. Honestly, I was getting worried we would never see this amazing coffee that I had told our staff about.

Coffee In Season
Seasonality of Coffee.
Over the last 4 months you may have noticed a predominance of South American coffees in our line-up. Why? Well, it’s simple: they are in season. Coffee—even before it is roasted—has a shelf life. From the time a coffee is harvested it undergoes four to five months of processing and resting before it is shipped and arrives in Olympia. Once the coffee is in our facility it has only about 6 months of complete untarnished perfection. After about 6 months, the coffee slowly begins to show signs of aging, or what we call “faded, baggy, past-crop” flavors.

Why Are Coffee Farmers Abandoning Organic?
We are a 100% Organic Coffee Roaster; this is rare in the coffee industry. Organic production costs more in the short term, but we think less in the long term. Coffee prices are currently very high at the C Market, and yet many coffee producers are not seeing the rewards they were promised when they switched to organic production. Thus many are abandoning organic practices. Many roasters are not rewarding their producers with higher prices for organic production. Ahhhh, La Florida...
If you LOVE the Colombia Finca La Florida Antonio Manuel Ovies like I do, you ought to get yourself into the shop and enjoy its luscious appeal before it runs out. These microlots of coffee are exciting, if all-too-fleeting! sigh
If you haven’t tried this coffee yet, do yourself a favor and grab a cup! Never have I experienced such rich notes of baking winter squash in a coffee. Sound strange? It’s DELICIOUS!!
